Ingredients

  • 500 grams Ground chicken
  • 1 medium Zucchini (grated and excess water squeezed out)
  • 1 medium Carrot (grated)
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 large Egg
  • 60 grams Almond flour
  • 60 grams Gluten-free breadcrumbs
  • 2 tablespoons Olive oil
  • 4 tablespoons Coconut oil (or another high-heat oil, for frying)

Directions

Step 1

In a large mixing bowl, combine the ground chicken, grated zucchini, grated carrot, garlic powder, onion powder, salt, black pepper, and egg. Mix until well incorporated.

Step 2

Add the almond flour to the mixture and mix again until the mixture holds together but is not too sticky.

Step 3

Shape the mixture into small nugget-shaped pieces, about 2 inches wide, and place them on a parchment-lined baking sheet.

Step 4

In a separate shallow bowl, pour the gluten-free breadcrumbs. Coat each nugget evenly with the breadcrumbs and return them to the baking sheet.

Heat the coconut oil in a large skillet over medium heat. Be careful not to let the oil smoke.
