Ingredients

  • 500 grams Kumara (sweet potatoes), peeled and diced
  • 4 pieces Celery stalks, chopped
  • 1 piece Yellow onion, finely chopped
  • 2 pieces Garlic cloves, minced
  • 1 liter Vegetable stock (gluten-free)
  • 400 ml Coconut milk (full-fat)
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the finely chopped onion and sauté for 5 minutes until it becomes translucent.

Step 3

Stir in the minced garlic and cook for an additional minute, being careful not to burn it.

Add the chopped celery and cook for 5 minutes until slightly softened.

Add the diced kumara to the pot, stirring to combine with the vegetables.

Pour in the vegetable stock and bring to a boil. Once boiling, reduce the heat to low and cover with a lid.
