Ingredients

  • 3 cups Unsweetened shredded coconut
  • 0.75 cups Sweetened condensed milk
  • 1 teaspoon Pure vanilla extract
  • 2 large Egg whites
  • 0.25 teaspoons Salt
  • 4 ounces Optional: Semi-sweet chocolate

Directions

Step 1

Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix well until evenly coated.

Step 3

In a separate bowl, use a hand mixer or whisk to beat the egg whites and salt until stiff peaks form.

Step 4

Gently fold the whipped egg whites into the coconut mixture, being careful not to deflate the egg whites.

Step 5

Using a tablespoon or a small cookie scoop, drop mounds of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.

Step 6

Bake in the preheated oven for 20–25 minutes, or until the macaroons are golden brown on the edges and set in the middle.

Let the macaroons cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
