Ingredients

  • 2 cups Gluten-free all-purpose flour (with xanthan gum)
  • 1 tablespoon Baking powder
  • 0.25 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.5 cup Unsalted butter, cold and diced
  • 1 cup Sharp cheddar cheese, grated
  • 2 tablespoons Fresh dill, finely chopped
  • 1 large Egg
  • 0.75 cup Buttermilk, cold
  • 0.25 cup Extra gluten-free flour (for dusting)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, and black pepper until well combined.

Step 3

Add the cold, diced butter to the bowl. Using a pastry cutter or your fingertips, work the butter into the flour mixture until it resembles coarse crumbs.

Step 4

Fold in the grated cheddar cheese and chopped dill, ensuring they're evenly distributed throughout the mixture.

Step 5

In a small bowl, whisk together the egg and buttermilk. Reserve about 1 tablespoon of the mixture to brush the tops of the scones later.

Step 6

Gradually pour the buttermilk mixture into the dry ingredients, stirring gently with a wooden spoon or a spatula until the dough just comes together. Be careful not to overmix.

Step 7

Lightly dust a clean surface with the extra gluten-free flour. Turn the dough out onto the surface and gently pat it into a circle about 1 inch thick.

Step 8

Using a sharp knife, slice the dough into 8 equal wedges. Place each wedge on the prepared baking sheet, spacing them about 1 inch apart.

Step 9

Brush the tops of the scones with the reserved buttermilk mixture for a golden finish.

Step 10

Bake in the preheated oven for 13-15 minutes, or until the scones are puffed up and golden brown.

Step 11

Remove from the oven and allow the scones to cool slightly on the baking sheet before transferring them to a wire rack.

Step 12

Serve warm or at room temperature, and enjoy your savory Gluten Free Cheddar Dill Scones!
