  • 113 g Unsalted butter (softened)
  • 150 g Brown sugar (packed)
  • 50 g Granulated sugar

  • 1 tsp Baking soda
  • 0.25 tsp Salt
  • 0.75 tsp Ground ginger
  • 0.5 tsp Ground cinnamon
  • 70 g Candied ginger (finely chopped)
  • 50 g Granulated sugar (for rolling)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking sheets with parchment paper.

In a large mixing bowl, use an electric mixer to cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).

Add the egg and vanilla extract to the mixture and beat until fully combined.
