Ingredients

  • 1 cup Natural unsweetened peanut butter
  • 0.25 cup Coconut flour
  • 0.25 cup Unsweetened shredded coconut
  • 2 tablespoons Stevia or monk fruit sweetener
  • 2 tablespoons Coconut oil
  • 1 teaspoon Vanilla extract (alcohol-free)
  • 0.125 teaspoon Sea salt

Directions

Step 1

In a medium-sized mixing bowl, combine the peanut butter, coconut flour, shredded coconut, and stevia or monk fruit sweetener. Mix until well incorporated.

Step 2

Add the melted coconut oil, vanilla extract, and sea salt to the mixture. Stir thoroughly until the ingredients form a thick dough-like consistency. If the mixture is too dry, add a small additional amount of melted coconut oil, 1 teaspoon at a time.

Step 3

Using clean hands, scoop out about 1 tablespoon of the mixture and roll it into a ball. Repeat this process until all of the dough is used, resulting in approximately 12 balls.

Step 4

Place the peanut butter balls on a plate or tray lined with parchment paper to prevent sticking.

Chill the balls in the refrigerator for at least 30 minutes to firm up before serving.
