Ingredients

  • 3 cups Gluten-free all-purpose flour blend
  • 1 teaspoon Xanthan gum
  • 1 tablespoon Baking powder
  • 1 teaspoon Salt
  • 1 tablespoon Granulated sugar
  • 2.5 teaspoons Instant yeast
  • 1 cup Warm water (around 110°F/45°C)
  • 2 tablespoons Olive oil
  • 2 large Eggs
  • 1 cup Shredded mozzarella cheese
  • 2 tablespoons Butter, melted
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Grated Parmesan cheese
  • 0.5 teaspoon Dried parsley (optional, for garnish)

Directions

Step 1

In a large mixing bowl or the bowl of a stand mixer, combine the gluten-free all-purpose flour, xanthan gum (if your blend doesn’t already include it), baking powder, salt, sugar, and instant yeast.

Step 2

Pour in the warm water and olive oil. Add the eggs and mix until a sticky dough forms. If using a stand mixer, use the paddle attachment on medium speed for about 2 minutes.

Step 3

Cover the dough loosely with plastic wrap or a clean kitchen towel. Let it rest in a warm place for 30 minutes to allow it to rise slightly. It won’t double in size but should look puffed.

Step 4

While the dough is resting, preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or lightly grease it.

Step 5

If making Crazy Bread, transfer the dough onto the prepared baking sheet. Using wet or oiled hands (to prevent sticking), shape the dough into a flat rectangle about 1/2 inch thick. For pizza, shape it into a round or rectangular crust, depending on your preference.

Step 6

Sprinkle the shredded mozzarella evenly across the top of the dough. For pizza, add additional toppings of your choice over the cheese.

Step 7

Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the cheese is bubbly.

Step 8

Meanwhile, prepare the garlic butter topping by combining melted butter, garlic powder, and grated Parmesan cheese in a small bowl.

Step 9

When the bread or pizza comes out of the oven, immediately brush the garlic butter mixture over the surface. Sprinkle with dried parsley if desired for a pop of color.

Step 10

Allow to cool slightly, then slice into breadsticks (for Crazy Bread) or wedges (for pizza). Serve warm and enjoy!
