Ingredients

  • 200 grams Gluten-free all-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 50 grams Sugar
  • 180 milliliters Unsweetened almond milk (or other lactose-free milk)
  • 1 piece Large egg
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Coconut oil (melted) or lactose-free butter substitute
  • 1 piece Apple (peeled, cored, and diced small)
  • 1 as needed Cooking spray or additional coconut oil for greasing

Directions

Step 1

In a large bowl, whisk together the gluten-free flour, baking powder, cinnamon, salt, and sugar until well combined.

Step 2

In a separate medium bowl, whisk together the almond milk, egg, vanilla extract, and melted coconut oil until smooth.

Step 3

Gradually pour the wet ingredients into the dry ingredients, stirring gently with a spatula until just combined. Be careful not to overmix; the batter should be thick but scoopable.

Step 4

Fold the diced apple into the batter, ensuring the pieces are evenly distributed.

Step 5

Heat a large non-stick frying pan or griddle over medium heat and lightly grease with cooking spray or a small amount of coconut oil.

Step 6

Using a tablespoon or a small cookie scoop, drop spoonfuls of batter onto the hot surface, spacing them about 2 inches apart. You should aim for about 8-12 drop scones depending on the size you prefer.

Step 7

Cook the scones for 2-3 minutes on each side, or until golden brown and cooked through. The tops should set and bubbles may form before flipping.

Step 8

Remove the scones from the pan and transfer them to a cooling rack. Repeat with the remaining batter, re-greasing the pan as needed.

Step 9

Serve warm with a drizzle of maple syrup, a sprinkle of powdered sugar, or enjoy them plain!
