Ingredients

  • 1 pound Gluten-free Italian sausage
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 6 cups Chicken broth (certified gluten-free)
  • 3 medium Russet potatoes, peeled and sliced into thin rounds
  • 4 cups Kale, stems removed and leaves roughly chopped
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat. Add the gluten-free Italian sausage, breaking it apart with a wooden spoon as it cooks. Cook until browned and cooked through, about 6-7 minutes. Remove the sausage with a slotted spoon and set aside, leaving the drippings in the pot.

Step 2

Add the olive oil to the pot, followed by the diced onion. Sauté the onion for 3-4 minutes until it becomes soft and translucent. Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 3

Pour in the gluten-free chicken broth and bring it to a simmer. Add the sliced potatoes to the pot and cook for 10-12 minutes or until the potatoes are tender when pierced with a fork.

Step 4

Stir the chopped kale into the pot and let it wilt for 2-3 minutes.

Step 5

Return the cooked sausage to the pot. Reduce the heat to low, then stir in the heavy cream. Let the soup simmer gently for 2-3 minutes to allow the flavors to meld together.

Step 6

Season the soup with salt, black pepper, and crushed red pepper flakes (if using). Taste and adjust the seasoning as needed.

Step 7

Serve the Gluten-Free Zuppa Toscana hot, garnished with additional pepper flakes or a drizzle of olive oil if desired. Enjoy!
