Ingredients

  • 100 grams Gluten-free plain flour
  • 150 milliliters Whole milk
  • 3 Large eggs
  • 0.25 teaspoons Salt
  • 2 tablespoons Vegetable oil (or another high-smoke-point oil)

Directions

Step 1

Preheat your oven to 220°C (200°C fan) or 425°F. Place a 12-hole muffin tin in the oven to heat up.

Step 2

In a mixing bowl, whisk together the gluten-free plain flour and salt to ensure there are no lumps.

Step 3

In a separate bowl or jug, whisk the eggs and milk together until fully combined and frothy.

Step 4

Slowly pour the wet mixture into the bowl with the flour, whisking continuously until you have a smooth batter. Set the batter aside to rest for 10-15 minutes.

Step 5

Once the oven is preheated, carefully remove the muffin tin and pour about 1/2 teaspoon of vegetable oil into each hole. Return the tin to the oven for 5 minutes to heat the oil until it's very hot.

Step 6

Carefully remove the tin again and quickly pour the batter evenly into each hole, filling them about halfway. The hot oil will help the batter rise and create crisp edges.

Place the muffin tin back in the oven immediately and bake for 20-25 minutes, or until the Yorkshire puddings are puffed up and golden brown. Avoid opening the oven door during cooking as this can cause them to collapse.
