Ingredients

  • 500 grams Boneless, skinless chicken thighs
  • 60 ml Gluten-free tamari (soy sauce alternative)
  • 60 ml Mirin (gluten-free)
  • 60 ml Sake (gluten-free)
  • 2 tbsp Brown sugar
  • 1 clove Garlic, minced
  • 1 tsp Fresh ginger, grated
  • 6 Green onions (cut into 1.5-inch pieces)
  • 15 Small wooden skewers

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes to prevent burning while grilling.

Step 2

Cut the chicken thighs into bite-sized pieces, approximately 1.5 inches wide. Set aside.

Step 3

In a small saucepan, combine the tamari, mirin, sake, brown sugar, minced garlic, and grated ginger. Heat over medium-low heat and stir until the sugar dissolves. Simmer for 5-7 minutes until the mixture thickens slightly, forming the tare sauce. Remove from heat and let cool.

Thread the chicken pieces and green onion segments alternately onto the soaked skewers. Aim for 3-4 pieces of chicken and 2 pieces of green onion per skewer.
