Ingredients

  • 4 pieces Veal or chicken cutlets (pounded thin)
  • 0.5 cups Gluten-free all-purpose flour
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 large Eggs
  • 2 tablespoons Milk or dairy-free alternative
  • 1 cups Gluten-free breadcrumbs
  • 0.5 cups Unsalted butter or oil (for frying)
  • 4 pieces Lemon wedges (for serving)
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Place each veal or chicken cutlet between two pieces of plastic wrap. Pound the cutlets thin using a meat mallet or rolling pin until they are about 1/4 inch thick. Set aside.

Step 2

Prepare a breading station with three shallow dishes. In the first dish, combine the gluten-free flour, salt, and black pepper. In the second dish, whisk together the eggs and milk. In the third dish, add the gluten-free breadcrumbs.

Step 3

Dredge each cutlet in the gluten-free flour mixture, shaking off any excess. Next, dip it into the egg mixture, making sure it is fully coated. Finally, press it into the gluten-free breadcrumbs, ensuring the entire cutlet is evenly breaded. Set the breaded cutlets aside on a large plate.

Step 4

Heat the butter or oil in a large skillet over medium heat until it is shimmering but not smoking. You will need enough butter or oil to fully coat the bottom of the skillet.

Step 5

Fry the breaded cutlets one or two at a time, depending on the size of your skillet. Cook for 3 to 4 minutes per side, or until golden brown and crispy. Transfer the cooked cutlets to a plate lined with paper towels to drain any excess oil.

Step 6

Repeat the frying process with the remaining cutlets, adding more butter or oil to the skillet as needed.

Step 7

Serve the Gluten-Free Wiener Schnitzel immediately with lemon wedges on the side. Garnish with fresh parsley if desired. Pair with a side of potato salad, cucumber salad, or steamed vegetables for a complete meal.
