Ingredients

  • 300 grams Gluten-free white chocolate
  • 120 ml Heavy cream
  • 30 grams Unsalted butter
  • 1 teaspoon Vanilla extract
  • 50 grams Powdered sugar (for coating, optional)
  • 50 grams Desiccated coconut or finely chopped nuts (optional)

Directions

Step 1

Chop the gluten-free white chocolate into small, even pieces and place it into a heatproof bowl.

Step 2

In a small saucepan, heat the heavy cream and butter over medium heat until the mixture is hot but not boiling. Stir until the butter melts completely.

Step 3

Remove the saucepan from heat and pour the hot cream mixture over the chopped white chocolate. Let it sit for 2 minutes to allow the chocolate to melt.

Step 4

Gently stir the mixture with a spatula until smooth and shiny. If the chocolate does not melt completely, place the bowl over a pan of simmering water and stir until smooth.

Step 5

Add the vanilla extract to the melted mixture and stir until incorporated.

Step 6

Cover the bowl with plastic wrap and refrigerate for 2-3 hours, or until the mixture is firm enough to scoop.

Step 7

Using a small cookie scoop or spoon, take portions of the chilled mixture and roll them between your palms to form small balls (approximately 1 inch in diameter).

Step 8

Optional: Roll each truffle in powdered sugar, desiccated coconut, or finely chopped nuts to coat them evenly.

Step 9

Place the truffles on a baking sheet lined with parchment paper and refrigerate for another 30 minutes to set.

Step 10

Serve chilled or at room temperature. Store any remaining truffles in an airtight container in the refrigerator for up to one week.
