  • 250 grams Gluten-free all-purpose flour
  • 0.5 teaspoons Xanthan gum
  • 1 teaspoons Baking powder
  • 75 grams Caster sugar
  • 0.5 teaspoons Ground cinnamon
  • 110 grams Unsalted butter, chilled and diced
  • 75 grams Dried currants
  • 1 Egg, large
  • 2 tablespoons Whole milk
  • 1 tablespoons Vegetable oil or butter (for greasing the pan)
  • 2 tablespoons Granulated sugar (optional, for dusting)

Directions

Step 1

In a large mixing bowl, whisk together the gluten-free all-purpose flour, xanthan gum, baking powder, caster sugar, and ground cinnamon.

Add the diced, chilled butter to the bowl. Using your fingertips, rub the butter into the dry ingredients until the mixture resembles fine breadcrumbs.

Stir in the dried currants evenly throughout the mixture.

In a separate small bowl, beat the egg and mix in the whole milk. Pour this wet mixture into the dry ingredients and stir until a soft dough forms.
