Ingredients

  • 3 tablespoons Gluten-free soy sauce or tamari
  • 1 tablespoon Sesame oil
  • 2 tablespoons Olive oil
  • 2 large Eggs
  • 2 cloves Garlic cloves, minced
  • 1 cup Carrots, diced
  • 0.5 cup Frozen peas
  • 3 stalks Green onions, chopped
  • 1 medium Bell pepper, diced
  • 8 ounces Cooked gluten-free sausage, sliced
  • 3 cups Cooked and chilled white rice (use gluten-free-certified if necessary)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

In a small bowl, whisk together the gluten-free soy sauce or tamari and sesame oil. Set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet or wok over medium heat.

Step 3

Crack the eggs into the skillet and scramble them until fully cooked. Remove the scrambled eggs from the skillet and set aside.

Step 4

Add the remaining 1 tablespoon of olive oil to the skillet. Sauté the minced garlic until fragrant, about 30 seconds.
