Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 2 tablespoons Tapioca starch
  • 1 teaspoon Xanthan gum
  • 1 teaspoon Salt
  • 1 teaspoon Baking powder
  • 0.75 cup Warm water
  • 2 tablespoons Olive oil
  • 12 ounces Ground lamb or beef
  • 2 tablespoons Tomato paste
  • 1 medium Red bell pepper, finely diced
  • 1 small Onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 0.25 cup Flat-leaf parsley, finely chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Red pepper flakes (optional)
  • 4 pieces Lemon wedges

Directions

Step 1

Preheat your oven to 450°F (230°C) and line two baking trays with parchment paper.

Step 2

In a large mixing bowl, combine the gluten-free flour, tapioca starch, xanthan gum, salt, and baking powder.

Step 3

Gradually add the warm water and olive oil to the dry ingredients while mixing until a dough forms. Knead lightly until smooth, then cover and let rest for 10 minutes.

Step 4

Divide the dough into 4 equal portions. Roll each portion into a thin round or oval shape (about 10 inches in diameter) on a lightly floured surface or between two sheets of parchment paper.

Step 5

Place the rolled-out dough onto the prepared baking trays.

Step 6

In another bowl, combine the ground lamb or beef, tomato paste, diced red bell pepper, chopped onion, minced garlic, parsley, cumin, paprika, and red pepper flakes (if using). Mix until thoroughly combined.

Step 7

Spread a thin layer of the meat mixture evenly over each dough round, ensuring it reaches the edges.

Step 8

Bake in the preheated oven for 12–15 minutes, or until the edges are crisp and the meat is cooked through.

Step 9

Remove from the oven and let cool slightly. Serve warm with lemon wedges on the side for drizzling.
