Ingredients

  • 2 tablespoons Olive oil
  • 1 teaspoon Fresh thyme, finely chopped
  • 2 cloves Garlic cloves, minced
  • 4 medium Russet potatoes, peeled and chopped
  • 3 tablespoons Unsalted butter
  • 0.5 cup Whole milk (or dairy-free alternative)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Parmesan cheese (optional, for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and chop the russet potatoes into small, even pieces. Place them in a large pot of salted water and bring to a boil. Cook for 15-20 minutes, or until tender when pierced with a fork.

While the potatoes are cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion, carrots, and garlic, and sauté for 5 minutes until softened.
