Ingredients

  • 300 grams Gluten-free Korean rice cakes (tteok)
  • 3 cups Water
  • 3 tablespoons Gluten-free gochujang (Korean red chili paste)
  • 2 tablespoons Gluten-free soy sauce or tamari
  • 1 tablespoon Sugar
  • 2 cloves Garlic, minced
  • 1 cup Vegetable broth (or water)
  • 2 stalks Green onion, chopped
  • 1 teaspoon Sesame oil
  • 1 teaspoon White sesame seeds

Directions

Step 1

Soak the gluten-free rice cakes in warm water for 10-15 minutes if they are frozen or stiff. Drain before cooking.

Step 2

In a medium saucepan, bring 3 cups of water to a boil. Add the softened rice cakes and cook for 3 minutes, then drain and set aside.

Step 3

In the same saucepan, combine gluten-free gochujang, gluten-free soy sauce or tamari, sugar, minced garlic, and vegetable broth (or water). Stir well until the sauce is smooth.

Step 4

Bring the sauce to a simmer over medium heat. Add the rice cakes back into the saucepan and stir gently to coat them with the sauce.

Step 5

Simmer for 8-10 minutes, stirring occasionally, until the sauce thickens and the rice cakes become soft and chewy.

Step 6

Add the green onions and sesame oil in the last 2 minutes of cooking. Stir to combine.

Step 7

Remove from heat and transfer the tteok-bokki to a serving plate. Garnish with sesame seeds and additional chopped green onions if desired.

Step 8
