Ingredients

  • 12 oz Gluten-free fettuccine or spaghetti
  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 2 cloves Garlic, minced
  • 1 cup Heavy cream
  • 3 oz Parmesan cheese, finely grated
  • 2 tsp Black truffle oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper, freshly ground
  • 2 tbsp Fresh parsley, finely chopped (optional garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the gluten-free pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta and set it aside.

Step 2

In a large skillet over medium heat, heat the olive oil and butter until melted and shimmering.

Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to brown the garlic.

Lower the heat to medium-low and pour in the heavy cream. Stir gently and allow it to warm up, but avoid boiling. Simmer for 2-3 minutes.
