While the sugar syrup is cooking, whisk together the gluten-free cornstarch and the remaining 100 milliliters of water in another medium saucepan, ensuring no lumps remain.
Cook the cornstarch mixture over medium heat, whisking constantly, until it thickens into a paste-like consistency and turns glossy. This takes about 5 to 7 minutes.
Slowly and carefully pour the hot sugar syrup into the thickened cornstarch mixture, whisking constantly to combine.
