Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoons Salt (for dough)
  • 0.75 cups Warm water
  • 1 large Egg
  • 1 pound Ground beef or lamb
  • 1 large Onion, finely chopped
  • 1 teaspoon Salt (for filling)
  • 0.5 teaspoons Ground black pepper
  • 1 teaspoon Cumin
  • 1 small Potato, peeled and finely diced
  • 2 tablespoons Cooking oil (for greasing steamer)

Directions

Step 1

In a large mixing bowl, combine gluten-free all-purpose flour, xanthan gum, and salt. Mix well.

Step 2

Gradually add warm water and egg to the flour mixture, stirring until a dough begins to form.

Step 3

Knead the dough on a clean surface for 5-7 minutes until smooth. Cover with a damp cloth and let rest for 30 minutes.

Step 4

Prepare the filling by combining ground meat, chopped onion, salt, black pepper, cumin, and diced potato in a bowl. Mix well and set aside.

Step 5

After the dough has rested, divide it into four portions for easier handling.

Step 6

Roll out one portion of dough on a floured surface (using gluten-free flour to prevent sticking) until it is thin, about 1/16 inch thick.

Step 7

Cut out circles of dough using a 4-inch cutter or a glass. Re-roll scraps as needed.

Step 8

Place about 1 tablespoon of filling into the center of each circle.

Step 9

Bring opposite edges of the circle together and pinch to seal, forming a dumpling. Repeat with remaining dough and filling.

Step 10

Grease the tiers of a steamer with cooking oil to prevent sticking.

Step 11

Arrange the manty in the steamer, ensuring they don’t touch each other.

Step 12

Steam the manty over boiling water for 35-40 minutes, ensuring the filling is cooked through.

Step 13

Carefully remove the manty from the steamer and serve hot, optionally with sour cream or a garlic yogurt sauce.
