  • 300 grams dried mixed fruit (e.g., raisins, sultanas, currants)
  • 300 milliliters strong brewed black tea
  • 250 grams gluten-free all-purpose flour
  • 1 teaspoon xanthan gum
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 100 grams light brown sugar
  • 2 pieces large eggs
  • 50 grams unsalted butter, melted
  • 1 piece zest of an orange
  • 2 tablespoons optional whiskey or orange juice

Directions

Step 1

Place the dried mixed fruit in a medium bowl and pour the brewed tea over it. If desired, stir in the optional whiskey or orange juice. Cover and let soak overnight or for at least 6 hours to plump up the fruit.

Preheat your oven to 170°C (325°F) and grease and line a loaf tin with parchment paper.

In a large mixing bowl, combine the gluten-free all-purpose flour, xanthan gum, baking powder, ground cinnamon, ground nutmeg, and light brown sugar. Mix well to distribute evenly.
