  • 2 tablespoons Tomato paste
  • 4 cloves Garlic cloves, minced
  • 1 medium Onion, diced
  • 2 medium Carrots, chopped
  • 2 stalks Celery stalks, chopped
  • 1 bundle Bouquet garni (a bundle of thyme, bay leaf, and parsley tied together)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 0.5 cup Gluten-free bread crumbs or almond flour (optional, for topping)

Directions

Step 1

Rinse the dried white beans and place them in a large bowl. Cover with water and soak overnight (or for at least 8 hours). Drain and set aside.

Preheat your oven to 350°F (175°C).

Heat 1 tablespoon of olive oil in a large oven-safe casserole or Dutch oven over medium-high heat. Brown the duck legs, sausage, and pork shoulder in batches until golden on all sides. Remove and set aside.

Remove the bouquet garni and serve the cassoulet hot, garnished with fresh parsley if desired.
