  • 1 cup Whole milk
  • 0.75 cup Granulated sugar

  • 3 tablespoons Hot water
  • 2 tablespoons Cocoa powder
  • 6 pieces Gluten-free ladyfingers
  • 0.25 cup Dark chocolate shavings or chips (optional)

Directions

Step 1

In a small bowl, dissolve the instant espresso powder in hot water. Let cool to room temperature.

Step 2

In a mixing bowl, whisk together the heavy cream, whole milk, and granulated sugar until the sugar is dissolved.

Step 3

Add in the mascarpone cheese, vanilla extract, and the cooled espresso mixture. Mix until smooth and well combined.

Step 4

Churn the mixture in an ice cream maker according to the manufacturer's instructions, usually about 20-25 minutes.

While the ice cream churns, roughly chop the gluten-free ladyfingers into small bite-sized pieces.
