  • 6 pieces Gluten-free tortillas

  • 1 cup Cheddar cheese, shredded
  • 1 medium Red bell pepper, diced
  • 1 small Red onion, diced
  • 0.25 cup Fresh cilantro, chopped
  • 0.5 cup Sour cream (or dairy-free alternative)
  • 0.5 cup Salsa
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Garlic powder
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.

In a large mixing bowl, combine the shredded rotisserie chicken or black beans, shredded cheddar cheese, diced red bell pepper, diced red onion, and chopped cilantro.
