Ingredients

  • 6 pieces Eggs
  • 6 pieces Red chili peppers
  • 4 pieces Shallots
  • 3 pieces Garlic cloves
  • 2 medium-sized Tomatoes
  • 3 tablespoons Coconut oil (or other gluten-free cooking oil)
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 1 tablespoon Lime juice
  • 1 tablespoon Gluten-free soy sauce or tamari
  • 2 tablespoons Water

Directions

Step 1

Place the eggs in a pot, cover them with water, and bring to a boil. Lower the heat to a simmer and cook for 10 minutes.

Step 2

Once cooked, transfer the eggs to a bowl of ice water to cool. Peel the shells off and set the eggs aside.

Step 3

In a blender or food processor, combine the red chili peppers, shallots, garlic, and tomatoes. Blend into a smooth paste.

Step 4

Heat the coconut oil in a deep skillet over medium heat. Add the blended chili paste and sauté for 5–7 minutes until fragrant and the oil starts to separate from the paste.

Season the chili paste with salt, sugar, lime juice, and gluten-free soy sauce or tamari. Stir well to combine.

Add 2 tablespoons of water to the skillet and mix to loosen up the sauce slightly.

Gently add the peeled hard-boiled eggs to the skillet, rolling them carefully to coat them evenly in the sauce.

Lower the heat and simmer for 5 minutes, allowing the eggs to absorb the flavors of the sauce.
