  • 6 Scallions, chopped
  • 3 pods Star anise
  • 1 Cinnamon stick
  • 2 Bay leaves
  • 1 teaspoon Sichuan peppercorns
  • 2 tablespoons Tomato paste
  • 8 cups Beef stock (gluten-free)
  • 12 oz Gluten-free noodles
  • 4 heads Bok choy, halved
  • 2 Carrots, sliced
  • 2 tablespoons Cooking oil
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 2 tablespoons Fresh cilantro, chopped (optional garnish)
  • 1 tablespoon Chili oil (optional)

Directions

Step 1

In a large pot, heat the cooking oil over medium heat. Add the minced garlic, sliced ginger, and half the chopped scallions. Sauté until aromatic, about 1-2 minutes.

Add the beef cubes to the pot and brown evenly on all sides, about 5-7 minutes.
