Ingredients

  • 1 head Green cabbage
  • 2 tablespoons Olive oil
  • 1 medium, diced Onion
  • 3 cloves, minced Garlic
  • 0.5 pound Ground beef
  • 0.5 pound Ground pork
  • 1 cup Cooked white rice
  • 1 large Egg
  • 2 tablespoons, chopped Fresh parsley
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 28 ounces (1 can) Crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 cup Vegetable broth
  • 1 tablespoon White vinegar
  • 1 teaspoon Sugar

Directions

Step 1

Carefully remove 10-12 large outer leaves from the cabbage. Bring a large pot of water to a boil and blanch the cabbage leaves for 2-3 minutes until softened. Remove from water and set aside to cool.

Step 2

In a skillet, heat olive oil over medium heat. Sauté the diced onion and minced garlic until soft and fragrant, about 5 minutes. Remove from heat and set aside to cool slightly.

Step 3

In a large bowl, combine the ground beef, ground pork, cooked rice, egg, parsley, oregano, salt, pepper, and the sautéed onion and garlic. Mix until well combined.

Step 4

Place a cabbage leaf, vein-side down, on a flat surface. Spoon about 1/4 cup of the filling mixture onto the center of the leaf. Fold the sides over the filling and roll the leaf tightly like a burrito. Repeat with the remaining leaves and filling.

Step 5

In a deep skillet or Dutch oven, stir together crushed tomatoes, tomato paste, vegetable broth, white vinegar, and sugar. Heat over medium-high until the sauce begins to simmer.

Step 6

Arrange the stuffed cabbage rolls seam-side down in the sauce. Spoon a little sauce over the top of each roll to cover them.

Step 7

Reduce the heat to low, cover, and simmer the rolls for 60-75 minutes until the cabbage is tender and the filling is cooked through.

Step 8

Serve hot, spooning extra sauce over the top of the rolls. Garnish with additional parsley if desired.
