Ingredients

  • 320 grams Gluten-free all-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 115 grams Unsalted butter (softened)
  • 150 grams Granulated sugar
  • 2 large Eggs (room temperature)
  • 120 milliliters Milk (or dairy-free alternative)
  • 1 teaspoons Vanilla extract
  • 100 grams Brown sugar
  • 1 teaspoons Ground cinnamon
  • 30 grams Gluten-free rolled oats (optional, for added texture)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease and line a 9-inch (23 cm) springform pan with parchment paper.

Step 2

In a medium bowl, whisk together 200 grams of gluten-free all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

Step 5

Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined and smooth. Do not overmix.

Step 6

Pour the batter into the prepared pan and smooth the top with a spatula.

Step 7

To make the crumb topping, combine the remaining 120 grams of gluten-free all-purpose flour, brown sugar, ground cinnamon, and gluten-free rolled oats in a bowl.

Step 8

Cut the cold butter into small cubes and use your hands or a fork to work it into the dry topping ingredients until you have a coarse, crumbly texture.

Step 9

Evenly scatter the crumb topping over the cake batter in the pan.

Step 10

Bake the cake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 11

Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Step 12

Serve the Gluten-Free Streuselkuchen with coffee or tea and enjoy!
