Ingredients

  • 8 ounces Gluten-free rice noodles
  • 8 ounces Chicken breast or beef sirloin (thinly sliced)
  • 1 medium Carrot (julienned)
  • 1 medium Bell pepper (sliced into thin strips)
  • 1.5 cups Broccoli florets
  • 2 Green onions (sliced diagonally)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Fresh ginger (grated)
  • 3 tablespoons Gluten-free soy sauce (tamari or coconut aminos)
  • 1 tablespoon Sesame oil
  • 2 tablespoons Vegetable oil (for stir-frying)
  • 1 teaspoon Cornstarch
  • 2 teaspoons Water
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Cook the gluten-free rice noodles according to the package instructions. Drain, rinse under cold water, and set aside.

Step 2

In a small bowl, mix the gluten-free soy sauce, sesame oil, cornstarch, and water to create a sauce. Set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken or beef and season with salt and pepper. Stir-fry for 4-5 minutes, until fully cooked, then remove from the pan and set aside.
