Ingredients

  • 1 pound Beef sirloin (thinly sliced)
  • 3 tablespoons Tamari (gluten-free soy sauce)
  • 1 tablespoon Cornstarch
  • 1 teaspoon Ground ginger
  • 3 cloves Garlic (minced)
  • 2 tablespoons Potato starch or tapioca starch (optional for beef coating)
  • 2 tablespoons Sesame oil
  • 1 medium Bell pepper (sliced into strips)
  • 1 medium Carrot (julienned or thinly sliced)
  • 2 cups Broccoli florets
  • 1 cup Snow peas (trimmed)
  • 3 stalks Green onions (chopped)
  • 2 tablespoons Vegetable oil (or avocado oil)
  • 2 tablespoons Water
  • 1 teaspoon Sesame seeds (optional, for garnish)

Directions

Step 1

In a mixing bowl, combine the sliced beef with 2 tablespoons of tamari, cornstarch, and ground ginger. If desired, toss the beef slices in 2 tablespoons of potato starch or tapioca starch for a crispier texture. Set aside to marinate for 10 minutes.

Step 2

Prepare all the vegetables by slicing the bell pepper into strips, julienning the carrot, breaking broccoli into small florets, trimming the snow peas, and chopping the green onions. Set aside.

Step 3

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil and let it heat until shimmering.

Step 4

Working in batches, add the marinated beef slices to the skillet in a single layer. Cook for 2-3 minutes on each side until browned and just cooked through. Remove the beef from the skillet and set aside.

Step 5

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Stir-fry the minced garlic for 30 seconds until fragrant.

Step 6

Add the bell pepper, carrot, and broccoli to the skillet. Stir-fry for 3-4 minutes or until the vegetables are slightly tender but still crisp.

Step 7

Stir in the snow peas and cook for another 1-2 minutes.

Step 8

In a small bowl, mix the remaining 1 tablespoon of tamari with 2 tablespoons of water and 2 teaspoons of sesame oil. Pour this mixture over the vegetables in the skillet.

Step 9

Return the cooked beef to the skillet and toss everything together. Cook for 1-2 minutes, allowing the flavors to meld and the sauce to thicken slightly.

Step 10

Remove the skillet from heat and garnish the stir-fry with chopped green onions and sesame seeds (if using).

Step 11

Serve hot as-is or over your favorite gluten-free rice or noodles.
