Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 0.5 cups Tapioca starch
  • 1 teaspoon Xanthan gum
  • 0.75 cups Warm water
  • 2 tablespoons Vegetable oil
  • 1 block Firm tofu
  • 1 cup Shredded cabbage
  • 0.5 cups Shredded carrots
  • 0.25 cups Chopped green onions
  • 2 tablespoons Gluten-free soy sauce
  • 1 teaspoon Sesame oil
  • 2 cloves Minced garlic
  • 1 teaspoon Grated ginger
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Pepper

Directions

Step 1

In a large mixing bowl, combine the gluten-free all-purpose flour, tapioca starch, and xanthan gum. Mix well.

Step 2

Gradually add the warm water and vegetable oil to the dry ingredients, mixing until it forms a soft dough. Knead lightly for 2-3 minutes until smooth. Cover with a damp cloth and set aside.

Step 3

Press the block of tofu to remove excess water, then crumble it into small pieces.

Step 4

In a large skillet over medium heat, add the crumbled tofu, shredded cabbage, shredded carrots, chopped green onions, gluten-free soy sauce, sesame oil, minced garlic, grated ginger, salt, and pepper. Stir-fry for 5-7 minutes until the mixture is well-combined and the vegetables are tender. Remove from heat and let it cool.

Step 5

Divide the dough into small, equal portions (about 16-18 pieces). Roll each portion into a ball and then flatten it into a thin circle, about 3 inches in diameter.

Step 6

Place a small spoonful of the filling in the center of each circle of dough. Fold the dough over the filling to create a half-moon shape and press the edges together to seal tightly. You can crimp the edges for a decorative look, if desired.

Step 7

Prepare a steamer by lining it with parchment paper or lightly oiling it to prevent sticking. Arrange the dumplings in a single layer, leaving space between them.

Step 8

Bring water to a boil in the bottom of the steamer. Once boiling, place the steamer basket onto the pot, cover, and steam the dumplings for 10-12 minutes, or until the dough turns translucent and is cooked through.

Step 9

Serve the dumplings warm with your favorite gluten-free dipping sauce, such as tamari or a sesame-soy dipping sauce.
