Ingredients

  • 2 cups Gluten-free all-purpose flour
  • 0.5 cup Tapioca starch
  • 1 teaspoon Xanthan gum
  • 0.75 cup Hot water
  • 1 pound Ground pork (or chicken for a lighter option)
  • 1 cup Cabbage, finely shredded
  • 0.5 cup Carrot, grated
  • 3 stalks Scallions, finely chopped
  • 2 tablespoons Gluten-free soy sauce or tamari
  • 1 teaspoon Sesame oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, minced
  • 1 tablespoon Cornstarch
  • 0.5 teaspoon Salt
  • 0.25 teaspoon White pepper
  • 2 tablespoons Water (for sealing wrappers)

Directions

Step 1

In a mixing bowl, combine the gluten-free all-purpose flour, tapioca starch, and xanthan gum.

Step 2

Gradually add the hot water while stirring with a spoon or spatula until the mixture comes together into a dough.

Step 3

Knead the dough on a lightly floured surface for 2-3 minutes until smooth. Cover with plastic wrap and let it rest for 20 minutes.

Step 4

Prepare the filling by mixing the ground pork (or chicken), cabbage, carrot, scallions, garlic, ginger, gluten-free soy sauce, sesame oil, cornstarch, salt, and white pepper in a large bowl. Mix thoroughly.

Step 5

Divide the dough into small portions (about the size of a walnut) and roll each one into a thin circle about 3 inches in diameter using a rolling pin. Use extra gluten-free flour to prevent sticking.

Step 6

Place about 1 tablespoon of filling in the center of each wrapper. Dab the edges of the wrapper with a small amount of water, then fold and pleat the edges to seal the dim sim tightly.

Step 7

Repeat with the remaining dough and filling until all dim sims are formed.

Step 8

Line a bamboo steamer or metal steamer with parchment paper to prevent sticking, or lightly grease it with oil.

Step 9

Place the dim sims in the steamer, making sure to leave some space between each one to prevent sticking.

Step 10

Bring a pot of water to a boil and set the steamer over the pot. Cover and steam the dim sims over medium heat for 12-15 minutes, or until the wrappers are tender and the filling is cooked through.

Step 11

Serve the dim sims hot with gluten-free soy sauce or chili dipping sauce on the side.
