Take the steaks out of the refrigerator 30 minutes before cooking to bring them to room temperature. Pat the steaks dry with a paper towel and season both sides with salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the steaks and sear for 3-4 minutes on each side for medium-rare or adjust the cooking time to your preferred doneness.
