Ingredients

  • 2 pieces Gluten-free tortillas
  • 2 cups Fresh spinach
  • 1 cup Shredded mozzarella cheese
  • 1 tablespoon Olive oil
  • 1 clove Garlic
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Optional: Red pepper flakes

Directions

Step 1

Heat the olive oil in a skillet over medium heat.

Step 2

Finely mince the garlic and add it to the skillet. Sauté for 1-2 minutes until fragrant.

Step 3

Add the fresh spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until wilted. Season with salt, black pepper, and optional red pepper flakes. Remove from heat and set aside.

In a clean skillet or griddle, place one gluten-free tortilla over medium heat.
