  • 12 pieces Gluten-free lasagna noodles
  • 10 cups Fresh spinach
  • 2 tablespoons Olive oil
  • 16 ounces Ricotta cheese
  • 2 cups Shredded mozzarella cheese
  • 1 cup Grated Parmesan cheese
  • 1 whole Large egg
  • 4 cups Marinara sauce
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 0.5 teaspoons Garlic powder

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the gluten-free lasagna noodles according to the package instructions. Drain, rinse them under cold water, and set aside on a clean towel.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the spinach, a pinch of salt, and sauté until wilted, about 3-4 minutes. Remove from heat and let cool slightly. Squeeze out any excess moisture from the spinach using a clean kitchen towel or paper towels.

Step 4

In a large mixing bowl, combine the ricotta cheese, 1 cup of shredded mozzarella, 1/2 cup of grated Parmesan, the egg, garlic powder, 1/2 teaspoon of salt, and the black pepper. Mix until well combined, then fold in the cooked spinach.

Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 40 minutes.

Remove the foil and bake for an additional 20 minutes, or until the top is golden and bubbly.

Let the lasagna cool for 10-15 minutes before slicing and serving.
