  • 0.5 teaspoon Salt
  • 2 tablespoons Olive oil
  • 2 large Eggs
  • 1 cup Unsweetened almond milk (or any gluten-free milk alternative)
  • 4 cups Fresh spinach leaves
  • 1 cup Ricotta cheese
  • 1 cup Shredded mozzarella cheese
  • 0.25 cup Parmesan cheese (optional)
  • 2 small Garlic cloves, minced
  • 0.5 teaspoon Crushed red pepper flakes (optional)
  • 1 unit Egg wash (1 egg beaten with 1 tablespoon water, for brushing)

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large mixing bowl, whisk together the gluten-free all-purpose flour, baking powder, xanthan gum, and salt.

In a small bowl, whisk the olive oil, eggs, and almond milk. Slowly add the wet ingredients to the dry ingredients, mixing until a dough forms.

Knead the dough gently on a floured surface with gluten-free flour for a minute or two until smooth. Divide the dough into 4 equal portions and set aside.
