Ingredients

  • 300 grams Fresh spinach
  • 2 large Eggs
  • 120 grams Almond flour
  • 50 grams Grated Parmesan cheese
  • 1 teaspoon Onion powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried Italian seasoning
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil or nonstick cooking spray

Directions

Step 1

Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper or lightly grease it with olive oil or nonstick cooking spray.

Step 2

Wash the spinach thoroughly and remove any tough stems. Place the spinach in a large skillet and cook over medium heat, stirring occasionally, until wilted (about 3 minutes). Let it cool slightly, then squeeze out as much excess water as possible using your hands or a clean kitchen towel.

Step 3

Chop the cooked spinach finely and transfer it to a mixing bowl.

Step 4

Add the eggs, almond flour, grated Parmesan cheese, onion powder, garlic powder, Italian seasoning, salt, and black pepper to the mixing bowl with the spinach. Mix well until all ingredients are fully combined.

Step 5

Using your hands, roll the mixture into small balls about 1.5 inches in diameter and place them on the prepared baking sheet. Space them slightly apart.

Step 6

Bake in the preheated oven for 20-25 minutes, or until the spinach balls are golden brown and firm to the touch.

Step 7

Remove the spinach balls from the oven and let them cool slightly before serving. Serve warm as a snack, appetizer, or side dish.
