Ingredients

  • 6 cups Baby spinach, fresh
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese, grated
  • 1 cup Mozzarella cheese, shredded
  • 1 cup Ricotta cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 0.25 teaspoon Red pepper flakes (optional)
  • 2 tablespoons Fresh basil leaves, chopped (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the gluten-free pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it burn.
