Ingredients

  • 500 grams Pork tenderloin (sliced thinly)
  • 4 tablespoons Tamari (gluten-free soy sauce)
  • 2 teaspoons Sesame oil
  • 2 teaspoons Cornstarch
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Honey or maple syrup
  • 3 cloves Garlic (minced)
  • 1 teaspoon Ginger (grated)
  • 2 teaspoons Chili paste or sambal oelek (gluten-free)
  • 1 medium Red bell pepper (sliced thinly)
  • 1 medium Carrot (julienned)
  • 3 stalks Green onions (sliced diagonally)
  • 2 tablespoons Vegetable oil (for stir-frying)
  • 1 teaspoon Crushed red pepper flakes (optional, for garnish)
  • 1 teaspoon Sesame seeds (optional, for garnish)

Directions

Step 1

In a medium bowl, combine sliced pork tenderloin, 2 tablespoons of tamari, 1 teaspoon of sesame oil, and cornstarch. Mix well to coat the pork evenly and let it marinate for 10 minutes.

Step 2

In a small bowl, whisk together the remaining 2 tablespoons of tamari, rice vinegar, honey or maple syrup, minced garlic, grated ginger, and chili paste. Set the sauce aside.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated pork in a single layer. Stir-fry for 3-4 minutes until browned and cooked through. Remove the pork from the skillet and set aside.

Add the remaining 1 tablespoon of vegetable oil to the skillet. Stir-fry the red bell pepper and carrot for 2-3 minutes until slightly tender but still crisp.

Return the cooked pork to the skillet and pour in the prepared sauce. Toss everything together and cook for another 2 minutes until the sauce thickens slightly and coats the pork and vegetables evenly.
