  • 6 cups Gluten-free chicken or vegetable stock
  • 4 cloves Garlic cloves (finely minced)
  • 2 inches Ginger (sliced)
  • 3 stalks Green onions (cut into 2-inch pieces)
  • 2 teaspoons Whole Sichuan peppercorns
  • 2 pieces Star anise
  • 2 pieces Bay leaves
  • 1 piece Cinnamon stick
  • 1 cup Neutral oil (such as vegetable or avocado oil)
  • 1 tablespoon Sesame oil
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 1 tablespoon Rice vinegar

Directions

Step 1

Heat the neutral oil in a large heavy-bottomed pot over medium heat until shimmering.

Step 2

Add the dried Sichuan chili peppers, dried red chili peppers, and Sichuan peppercorns. Stir-fry for 1-2 minutes, being careful not to burn them.

Step 3

Lower the heat and add the minced garlic and sliced ginger. Stir-fry until fragrant, about 30 seconds.

Stir in the gluten-free Sichuan doubanjiang and cook for 1-2 minutes to release its aroma.
