Ingredients

  • 1 lb Pork tenderloin
  • 3 tbsp Tamari (gluten-free soy sauce)
  • 2 tsp Cornstarch
  • 2 tbsp Sesame oil
  • 3 cloves Garlic cloves, minced
  • 1 tbsp Fresh ginger, finely grated
  • 2 tbsp Spicy chili garlic sauce
  • 1 tbsp Honey
  • 1 tbsp Rice vinegar
  • 2 medium Bell peppers (red, yellow, or both), sliced thinly
  • 1 cup Snow peas
  • 1 large Carrot, julienned
  • 3 stalks Green onions, sliced
  • 4 cups Cooked white or brown rice
  • 1 tbsp Optional garnish: sesame seeds
  • 2 tbsp Optional garnish: fresh cilantro leaves

Directions

Step 1

Cut the pork tenderloin into thin strips and place it in a bowl.

Step 2

Add 1 tablespoon of tamari and 1 teaspoon of cornstarch to the pork. Mix well and let marinate for 10 minutes.

Step 3

In a small bowl, whisk together the remaining 2 tablespoons of tamari, 1 teaspoon of cornstarch, sesame oil, minced garlic, grated ginger, chili garlic sauce, honey, and rice vinegar to create the sauce. Set aside.

Step 4

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of sesame oil.

Step 5

Once the oil is hot, add the marinated pork strips. Stir-fry for 3-4 minutes until browned and cooked through. Remove the pork from the skillet and set aside.

Step 6

In the same skillet, add another tablespoon of sesame oil. Add the sliced bell peppers, snow peas, and julienned carrot. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.

Step 7

Return the cooked pork to the skillet. Pour the prepared sauce over the pork and vegetables. Stir well to coat everything evenly. Cook for another 1-2 minutes until the sauce thickens slightly.

Step 8

Remove from heat. Serve the spicy pork stir-fry immediately over cooked rice.

Step 9

Garnish with sesame seeds and fresh cilantro leaves, if desired.
