  • 12 leaves Curry leaves
  • 0.5 cup Dried coconut slices
  • 0.25 cup Oil (neutral like vegetable or coconut oil)
  • 1 teaspoon Mustard seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Powdered sugar
  • 0.5 cup Raisins (optional)

Directions

Step 1

Heat oil in a large, heavy-bottomed pan over medium heat.

Step 2

Add mustard seeds and allow them to splutter, about 30 seconds.

Step 3

Add curry leaves and sauté until they become crisp, about 1-2 minutes.

Step 4

Stir in peanuts, cashews, and dried coconut slices. Fry until they turn golden brown, about 4-5 minutes.

Lower the heat to medium-low and carefully add the rice flakes (poha) and gluten-free cereal. Stir continuously to coat everything evenly in the oil.
