  • 2 tablespoons Gochugaru (Korean chili flakes)
  • 2 tablespoons Gluten-free soy sauce
  • 1 tablespoon Honey
  • 1 tablespoon Sesame oil
  • 3 cloves Garlic cloves, minced
  • 1 teaspoon Fresh ginger, minced
  • 1 teaspoon Coconut sugar
  • 120 ml Chicken broth (or vegetable broth for vegetarian option)
  • 100 grams Cooked chicken, shredded (optional, omit for vegetarian option)
  • 2 stalks Scallions, chopped
  • 1 teaspoon Toasted sesame seeds
  • 1 piece Red chili peppers, thinly sliced (optional, for garnish)
  • 1 liter Water
  • 1 teaspoon Salt

Directions

Step 1

Fill a medium-sized pot with 1 liter of water and bring it to a boil. Add 1 teaspoon of salt and cook the gluten-free rice noodles according to the package instructions, typically about 6-8 minutes. Drain and set aside.

Step 2

In a small bowl, mix together the gochugaru, gluten-free soy sauce, honey, sesame oil, minced garlic, minced ginger, and coconut sugar to form the spicy sauce.

Heat a large skillet over medium heat. Add the spicy sauce and stir for about 1-2 minutes to bloom the flavors.

Step 4

Pour in the chicken broth (or vegetable broth) and bring the mixture to a simmer. Let it cook for 2-3 minutes until slightly thickened.

Step 5

If using cooked chicken, stir in the shredded chicken and heat through for 1-2 minutes.

Step 6

Add the cooked rice noodles to the skillet and toss until fully coated in the spicy sauce.

Step 7

Divide the noodles between two serving bowls. Garnish with chopped scallions, toasted sesame seeds, and sliced red chili peppers if desired.
