Ingredients

  • 12 oz Gluten-free spaghetti
  • 1 lb Ground beef (or ground turkey for a lighter option)
  • 1 cup Gluten-free breadcrumbs
  • 1 Egg
  • 0.25 cup Parmesan cheese, grated (optional for extra flavor)
  • 2 cloves Garlic, minced
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil
  • 28 oz Canned crushed tomatoes
  • 2 tbsp Tomato paste
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 Onion, finely chopped
  • 1 tsp Sugar (optional, to balance the acidity of the tomatoes)
  • 0.5 cup Water or gluten-free broth

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the gluten-free spaghetti according to the package instructions until al dente. Drain, rinse with warm water, and set aside.

Step 2

In a large mixing bowl, combine the ground beef, gluten-free breadcrumbs, egg, Parmesan cheese (if using), garlic, parsley, salt, and black pepper. Mix gently with your hands until just combined.

Step 3

Shape the mixture into meatballs, about 1.5 inches in diameter. Set aside on a plate.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the meatballs in a single layer and brown them on all sides, about 6-8 minutes. They do not need to be fully cooked at this stage. Remove them from the skillet and set aside.

Step 5

In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion until softened, about 3-4 minutes.

Step 6

Stir in the minced garlic and cook for 30 seconds until fragrant.

Step 7

Add the crushed tomatoes, tomato paste, dried oregano, dried basil, sugar (if using), and water or gluten-free broth. Stir to combine.

Step 8

Return the meatballs to the skillet, nestling them into the sauce. Reduce the heat to low, cover, and simmer for 20-25 minutes, stirring occasionally, until the meatballs are cooked through and the sauce thickens.

Step 9

Taste the sauce and adjust seasoning with additional salt and pepper if needed.

Step 10

Serve the meatballs and sauce over the cooked gluten-free spaghetti. Garnish with extra chopped parsley and Parmesan cheese, if desired.

Step 11

Enjoy your flavorful and gluten-free spaghetti with tomato sauce and meatballs!
