Ingredients

  • 12 oz gluten-free spaghetti
  • 2 pieces boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 medium, diced yellow onion

  • 28 oz crushed tomatoes (canned)
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.25 tsp red chili flakes
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp, chopped fresh parsley
  • 0.25 cup, grated Parmesan cheese (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the gluten-free spaghetti according to the package instructions. Reserve 1/2 cup of the pasta cooking water, then drain and set the spaghetti aside.

Step 2

While the pasta cooks, prepare the chicken. Season both sides of the chicken breasts with salt and pepper.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for about 5-6 minutes per side, or until fully cooked and golden brown. Remove the chicken from the skillet and let it rest for 5 minutes before slicing into thin strips.

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced onion and cook for 2-3 minutes until softened, stirring frequently.
