Ingredients

  • 12 oz Gluten-free spaghetti
  • 2 tbsp Olive oil
  • 4 pieces Garlic cloves, minced
  • 4 cups Cherry tomatoes, halved
  • 2 tbsp Tomato paste
  • 0.25 cup Fresh basil leaves, chopped
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Optional: Red pepper flakes
  • 0.25 cup Gluten-free Parmesan cheese (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the gluten-free spaghetti according to the package instructions, being careful not to overcook as gluten-free pasta can become mushy. Reserve 1 cup of pasta water before draining the cooked spaghetti.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 4

Add the halved cherry tomatoes to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tomatoes soften and release their juices.

Step 5

Stir in the tomato paste, salt, black pepper, and optional red pepper flakes. Cook for another 2-3 minutes to combine the flavors.

Step 6

Add half of the chopped fresh basil to the skillet and stir well.

Step 7

If the sauce seems too thick, add some of the reserved pasta water, a little at a time, until it reaches your desired consistency.

Step 8

Add the cooked spaghetti to the skillet and toss to coat the pasta evenly in the sauce.

Step 9

Serve immediately, garnished with the remaining fresh basil and gluten-free Parmesan cheese, if desired.
