Ingredients

  • 12 oz Gluten-free spaghetti
  • 3 tbsp Olive oil
  • 4 Garlic cloves, thinly sliced
  • 1 tsp Crushed red pepper flakes
  • 28 oz Canned whole peeled tomatoes
  • 1 tsp Salt
  • 0.25 tsp Freshly ground black pepper
  • 2 tbsp Fresh parsley, chopped (optional, for garnish)
  • 0.25 cup Gluten-free Parmesan cheese (optional, for serving)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the gluten-free spaghetti according to the package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set the spaghetti aside.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Step 3

Add the thinly sliced garlic to the skillet and sauté until fragrant and lightly golden, about 1-2 minutes. Be careful not to burn the garlic.

Step 4

Add the crushed red pepper flakes to the skillet and stir for 30 seconds to release their flavor.

Step 5

Carefully add the canned whole peeled tomatoes to the skillet, along with their juices. Use a wooden spoon or spatula to break the tomatoes into smaller pieces.

Step 6

Stir in the salt and freshly ground black pepper. Simmer the sauce over medium-low heat for 15-20 minutes, stirring occasionally, until it thickens slightly.

Step 7

Add the cooked gluten-free spaghetti to the skillet with the sauce. Toss to coat the pasta evenly in the spicy arrabbiata sauce. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.

Step 8

Taste and adjust seasoning with additional salt or pepper, if needed.

Step 9

Serve hot, garnished with chopped fresh parsley and gluten-free Parmesan cheese, if desired.
