  • 240 ml Milk (whole milk or a lactose-free alternative)
  • 40 grams Unsalted butter (softened)
  • 40 grams Granulated sugar
  • 7 grams Active dry yeast
  • 6 grams Salt
  • 1 large Egg

Directions

Step 1

Warm the milk to about 40°C (105°F) and stir in the sugar until dissolved. Add the active dry yeast and let it sit for 5-10 minutes until frothy.

Step 2

In a large mixing bowl, combine the gluten-free all-purpose flour, tapioca starch, and salt.

Add the yeast mixture, egg, and softened butter to the dry ingredients. Mix thoroughly using a stand mixer with a paddle attachment or by hand with a wooden spoon until you get a smooth but slightly sticky dough.
