  • 1 teaspoon garlic powder
  • 0.5 teaspoon black pepper
  • 1 teaspoon baking powder
  • 0 for frying vegetable oil

Directions

Step 1

Peel and cut the russet potatoes into cubes for easier boiling.

Place the potato cubes in a large pot, cover with water, and bring to a boil over high heat.

Step 3

Once boiling, reduce heat to medium and cook until the potatoes are fork-tender, about 15 minutes.

Step 4

Drain the potatoes and let them cool for a few minutes.

Step 5

Mash the potatoes using a potato masher or fork until smooth.

Step 6

In a large bowl, combine the mashed potatoes with cornstarch, gluten-free all-purpose flour, salt, onion powder, garlic powder, black pepper, and baking powder. Mix well until the dough forms.

Lightly flour a clean surface with gluten-free all-purpose flour.

Heat about 1 inch of vegetable oil in a large skillet over medium heat.

Step 11

Fry the smiley face potatoes in batches for 2-3 minutes on each side, or until golden brown and crispy.

Step 13

Serve the smiley face potatoes warm, with your choice of dipping sauce.
